Low Carb Yeast Dough Pizza

One thing we missed eating low carb was pizza. Real pizza. We tried the staple low carb pizza recipe, but it was too cheesy for our taste. We missed the yeasty flavor of a traditional dough. After much experimentation, Mina came up with a dough recipe that was both low carb and reminded us of “real” pizza. This is our end result.

Dough Ingredients (makes two medium or one large pizza):
1 ¼ cup warm water
1 ½ tablespoon yeast
1 tablespoon sugar
1 teaspoon cider vinegar
3 tablespoons butter
1 cup vital wheat gluten – Bob’s Red Mill Vital Wheat Gluten
½ cup almond flour – NOW Almond Flour
½ cup oat fiber – LifeSource Foods Oat Fiber 500
½ cup milled flax – Bob’s Red Mill Flaxseed Meal
1 teaspoon salt
1 teaspoon baking powder
6 drops liquid Splenda – SucraDrops

Slightly Spicy Roast Chicken

Another great LCHF (Low Carb High Fat) meal choice!

Make a brine for your chicken. You can adjust the various spices, or even leave some out, according to taste:

Water (as much as needed, usually 3 or 4 cups)
Salt (1/4 to 1/2 cup)
1T Black pepper corns
1T Ground black pepper
1T Garlic powder or chopped garlic
1T Onion powder or chopped onions
1t Crushed Cayenne pepper.
1T Tabasco sauce.
3T Frank’s Red Hot Sauce.
1T Assorted herbs, I like to add some Italian seasoning.

Brine your chicken in the fridge for at least 6 hours, maybe a day if you can. I use the extra large (2 or even 3 gallon) zip bags. Put the chicken in the bag, add brine, carefully squeeze the air out of the bag, seal, then place in a large bowl (to catch leaks) and in the fridge.

Preheat oven to 425F (or use 400F convection, which is what I did here, which helped produce a nice crispy skin).

Remove from brine, drain and rinse off to remove excess salt from the chicken.

Put in a roasting pan or even a large oven safe frying pan.

Roast until the white meat is 165F and the dark meat is 170F.

Rest for 10-15 minutes, then carve and enjoy!

Quick Low Carb Pizza

The secret is to use the Mission low carb tortilla. And to pre bake it first so the resulting pizza is not soggy. It really does turn out like a real pizza.

4 oz cheese

Faux Deep Dish Pizza (Relatively Low Carb)

I love pizza, but it’s not a low carb food. This is my close substitute, a variant of deep dish pizza, made without a crust in a casserole dish.

Ingredients:
3 15 oz cans Don Pepino pizza sauce
2 13 oz cans mushrooms
3 8 oz bags of shredded mozzarella
44 slices pepperoni

Nutritional info for the entire pizza:
4585 calories
324 grams fat
275 grams protein
105 grams carbohydrates (fiber has been subtracted)

Per serving nutritional info, I get four servings out of it, you may get more or less:
1146 calories
81 grams fat
69 grams protein
26 grams carbohydrates
